4 chicken thighs (bone-in, skin removed)

1/2 teaspoon ground cinnamon
A pinch of saffron threads (optional)
1/2 cup chicken broth or water
1 cup diced tomatoes (canned or fresh)
1/2 cup dried apricots (or prunes)
1/4 cup green olives, pitted
1 tablespoon honey
1/2 cup chickpeas (optional)
Fresh cilantro or parsley, chopped (for garnish)
Salt and pepper to taste

Instructions:

Marinate the Chicken: In a large bowl, mix cumin, coriander, turmeric, ginger, and cinnamon. Rub this spice blend onto the chicken thighs. Sprincle a pinch of salt and pepper, then set aside to marinate for at least 30 minutes (or overnight for deeper flavour).
