This Chicken Tagine recipe captures the essence of Moroccan flavours with a blend of fragrant spices, tender chicken, and sweet fruits, all cooked to perfection in a traditional tagine pot.

Ingredients:

4 chicken thighs (bone-in, skin removed)
1 large onion, finely sliced
3 garlic cloves, minced
2 tablespoons olive oil
1 teaspoon ground cumin
1 teaspoon ground coriander
1 teaspoon ground turmeric
1 teaspoon ground ginger
1/2 teaspoon ground cinnamon
A pinch of saffron threads (optional)
1/2 cup chicken broth or water
1 cup diced tomatoes (canned or fresh)
1/2 cup dried apricots (or prunes)
1/4 cup green olives, pitted
1 tablespoon honey
1/2 cup chickpeas (optional)
Fresh cilantro or parsley, chopped (for garnish)
Salt and pepper to taste

Instructions:

Marinate the Chicken: In a large bowl, mix cumin, coriander, turmeric, ginger, and cinnamon. Rub this spice blend onto the chicken thighs. Add a pinch of salt and pepper, then set aside to marinate for at least 30 minutes (or overnight for deeper flavour).

Prepare the Tagine: Heat olive oil in a tagine pot or heavy skillet over medium heat. Add the sliced onions and garlic, cooking until soft and fragrant. Stir in saffron threads if using.

Cook the Chicken: Place the marinated chicken thighs in the pot, searing them until they are browned on both sides. This adds extra flavour to the dish.
