Ingredients:

1 kg lamb shoulder or leg, cut into medium chunks
2 onions, finely chopped
4 garlic cloves, minced
2 tomatoes, diced
2 tablespoons tomato paste
1 teaspoon ground coriander
1 teaspoon ground cumin
1 teaspoon paprika
1/2 teaspoon turmeric
1/2 teaspoon black pepper
1/2 teaspoon cinnamon
Salt to taste
2 cups green or black olives, pitted
1 cup water or broth
2 tablespoons olive oil
1/4 cup fresh parsley, chopped
Lemon wedges for garnish

Instructions:

Prepare the lamb: Heat olive oil in a large pot or traditional tagine over medium heat. Add the lamb chunks and brown them on all sides to lock in the flavours. Remove the lamb and set aside.

Sauté the onions and garlic: In the same pot, add the onions and sauté until softened and translucent. Stir in the minced garlic and cook for another minute until fragrant.
