Set them aside.<\/p><p>Cook the Aromatics: In a large pot or Dutch oven, heat the olive oil over medium heat. Add the chopped onion and saut\u00e9 until it becomes soft and translucent, about 5-7 minutes. Add the minced garlic and cook for another minute until fragrant.<\/p><p>Next add Spices and Tomato Paste: Stir in the tomato paste, cumin, coriander, paprika, and caraway seeds (if using). Cook for 2-3 minutes, allowing the tomato paste and spices to meld together.<\/p><p>Tomatoes and Harissa are added followed by the chopped tomatoes (or canned diced tomatoes) and harissa to the pot. Continue cooking for about 5 minutes until the tomatoes start to break down and the mixture becomes saucy.<\/p><p>The Beans and Liquid are added and also add the soaked beans to the pot. Pour in enough water or vegetable broth to cover the beans by about 2 inches. At this point add the bay leaf.<\/p><p>Simmer the Stew: Bring the mixture to a boil, then reduce the heat to low. Cover the pot and let the stew simmer gently for about 1.5 to 2 hours, or until the beans are tender. Stir occasionally and check the liquid level, adding more water or broth if necessary to keep the beans covered.<\/p><p>Season and Serve: Once the beans are tender, season the stew with salt and pepper to taste. Remove the bay leaf before serving.<\/p><p>Garnish and Enjoy: Ladle the Loubia into bowls, garnish with fresh parsley or cilantro, and serve with lemon wedges on the side.
