How to Make Gemista

Ingredients:

3 medium tomatoes
3 medium aubergines
3 courgettes
3 green bell peppers
2 medium onions

For The Stuffing

300 gm of minced mead (any)
1 cup of rice (any)
1 medium carrot finely chopped
1/2 bunch of parsley, finely chopped
1/2 bunch of mint, finely chopped

The inside of the onions

2 cloves garlic
2 tbsp of tomato paste
   Salt and pepper to taste
1/2 cup of olive oil
1/2 cup of water

Instructions:
  1. Preheat the oven to 375°F (190°C).
  2. Cut off the top of each tomato, peppers, aubergines, courgettes and remove the seeds and flesh inside.
  3. Finely chop the onion and sauté it in 1/4 cup of olive oil until it’s translucent.
  4. Add the minced mead and fry till is golden brown
  5. Add the rice to the frying pan, and stir until the rice is coated with the oil.
  6. Add the parsley, salt, and pepper to the pan, stirring until well combined.
  7. Fill each tomato and pepper with the mixture, leaving some space at the top.
  8. Replace the tops of the tomatoes, peppers, aubergines, courgettes and place them in a baking dish.
  9. Mix the remaining olive oil and water in a bowl and pour over the stuffed vegetables.
  10. Bake the vegetables in the oven for 1 hour and 15 minutes or until the vegetables are tender and the rice is fully cooked.
  11. Serve hot and enjoy your delicious Gemista!
