Ful Meddamas Recipe (Lebanese Style)
Ingredients:

2 cups dried fava beans (or 2 cans of cooked fava beans)
1 cup canned chickpeas (optional)
3 cloves garlic, minced

1/4 cup extra virgin olive oil (plus extra for drizzling)
1 teaspoon ground cumin
Salt to taste
Freshly ground black pepper (optional)
1/4 cup fresh parsley, finely chopped
1 small tomato, diced (optional)
1 small onion, diced (optional)
Tahini sauce (optional)

Instructions:

Prepare the Fava Beans:
If using dried fava beans, soak them in water overnight. The next day, drain and rinse the beans.

Place the soaked (or canned) fava beans in a large pot and cover them with fresh water. If you’re adding chickpeas, include them at this stage. Bring the pot to a boil, then reduce the heat and simmer until the beans are tender, which takes about 1-2 hours for dried beans or 15-20 minutes for canned beans.

Season the Beans:
Once the beans are tender, drain them and place them in a large bowl. If you prefer a thicker consistency, lightly mash some of the beans with the back of a spoon or a potato masher.
