Christmas is almost around the corner, another year goes by really fast. December, for most of us means a bit bigger number on weight scale. Increased amount of time spent in shopping malls, meeting with friends and family, cold weather … Therefore, it is worth the time to look for light replacements for our favorite dishes. Switch mayonnaise on natural yoghurt, reach for baked instead of fried foods or reduce the amount of sugar in your tea.
This year I succeeded in this unfortunate “sugar in tea” elimination challenge. And believe me – it was not an easy task. 3 teaspoons per cup is not a small number, and the fact that i usually had 4-5 cups a day … so I switched to fruit, green or white tea what really helped me to solve a problem.
I am all about the tea, and yet today was supposed to be just about onion rings, which I just love! Their standard version, fried in oil is one of my favorite snacks. However, recently browsing the internet I found a recipe that will allow me to enjoy their taste and save a few calories. Baked onion rings, tossed in a creamy batter and panko breadcrumbs. I bet they will soon become your favourite snack.
- 2 medium onions
- 1 cup sour cream
- 1 tablespoon apple cider vinegar
- 1 cup flour
- 1 tbsp cornstarch
- 3 tsp of salt
- 1 tsp sweet (or smoked) paprika
- 2 cups panko breadcrumbs
Prepare three bowls. In the first one mix flour, paprika and a teaspoon of salt, set aside. In second bowl mix the sour cream and vinegar. Add cornstarch and mix again until smooth. Whisk in half of flour mix from first bowl and set aside. In last bowl mix together panko breadcrumbs and salt, set aside.
Peel onions and cut into 3-4 mm thick slices. Each slice divide into individual rings. Those prepared rings dip into three bowls : flour, cream and panko breadcrumbs , then put on a baking tray lined with baking paper .
Place prepared trays in oven preheated to 220 degrees C and bake for about 10 minutes. After 10 minutes turn each rings on the other side and bake for another 10 minutes. Ready onion rings serve hot with your favorite sauce.
