Croatian Ćevapi

If you will find yourself on the Balkan peninsula you won’t be able to miss them. They are at  every restaurant, konobas or butcher shops. Cevapi – small sausages just waiting until you put them on the grill.  They go perfectly with ajvar, a bit of sun kissed tomatoes and white onions. However, if you are in a different part of the world -  there is a simple way to make them on your own.  Mix three types of meat (if you can not find a lamb, just add more  beef) add a bit of spices and put them on hot grill. Yes it’s that simple;)

  • 500g minced beef
  • 250g minced lamb
  • 700g minced pork
  • 1 egg white
  • 4 garlic gloves
  • 1 teaspoon salt
  • 1 teaspoon baking soda
  • 2 tsp ground pepper
  • 1 teaspoon cayenne pepper
  • 1/2 teaspoon paprika

In a large bowl, mix together minced meats, egg white, crushed garlic cloves, salt, baking soda, pepper, cayenne and paprika.
Form into small sausages and arrange them on a big plate, cover with plastic wrap and set aside for at least one hour in the fridge.
Grill cevapi until they are cooked through (about 30min) and serve with your favorite toppings.
